Today is National Pie Day. Yum.
Pie is terrific and there’s nothing like pumpkin pie. You can make my mother-in-law’s pie from the recipe here (http://www.sweettalebooks.com/pumpkin_pie.html) or you can try this one, from my grandmother’s recipes. It has no crust but is delicious!
Impossible Pumpkin Pie
1 can (16 oz.) pumpkin
1 can (13 oz.) evaporated milk
2 tbsp. butter (melted)
3/4 cup sugar (OR use 1/2 cup sugar and 2 tbsp. molasses)
1/2 cup Bisquick
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla
Grease pie plate (10 x 1 ½ inches). Beat all ingredients until smooth, 1 minute in blender on high or 2 minutes with hand beater. Pour into pie plate. Bake 50-55 minutes at 350 degrees.
